As you may or may not know, i'm currently on a low carb diet.
One of the things that i'm enjoying doing is making giant salads and eating them all up! I am not on a low fat diet, just low carbs, so olive oil, cheeses, hams, avocados, and so many things that are very restricted when on a low calorie diet are back on the menu! It's the carbohydrates that i'm trying to avoid, whether they be in simple sugar form (sweets, fruits, all those crazy corn derivatives), or complex carbohydrates (starch - some beans, potatoes, wheat, corn)
This one was thrown together in a jiffy.. and my tastebuds were very very happy! :D
What you will need:
Some tender leaves, i used a mix of rocket (rucola) and lamb's lettuce (valeriana).
Olive oil
whole grain mustard
salt and pepper
Parma ham, extremely thinly sliced
half an avocado, sliced
some gorgonzola or other strong tasting blue cheese, cut into cubes
walnuts
Pour some olive oil into a salad bowl, add a teaspoon or so of mustard, and a small amount of salt and pepper. using a fork, mix until combined.
Toss the clean and dry leaves into the bowl and keep tossing until they are all lightly but evenly covered with the dressing.
Arrange the ingredients in this order on top of the leaves.
Avocado slices
Torn parma ham
Blue cheese
Walnuts (i crush them roughly with my fingers as i throw them on)
Grind plenty of fresh pepper on top and serve :)
I adore cooking, and I love to use good and mostly fresh and seasonal ingredients. I hope you enjoy the things I've thrown together. My basic cooking style has grown from my love of food, using what I have in the fridge/pantry and whatever is in season. I love to make good use of the local produce (my time is spent between Australia and Malta, so this will vary according to where I am).
